In this episode Stacey and Jessica make Soup Beans, Hoe Cakes and Hot Toddies
- 1 pound dried pinto beans
- 8 cups water or broth
- 1 ham hock or salt pork
- 1 large onion
- Black pepper
Soak beans overnight (or quick soak method), drain and rinse.
Dice onion and all ingredients to stock pot.
Bring to a boil and drop to a simmer for two hours.
- 2 cups cornmeal
- 3/4 cup milk
- 1/4 tsp salt
Mix all and let set until milk is absorbed. Slowly add milk as needed to get to mixture able to roll into balls. Flatten to 1/4 inch thick circles. Fry in bacon grease or lard in cast iron skillet until golden brown.
- 1 cup hot water
- 1 tablespoon honey
- ½ ounce lemon juice
- 1 ½ ounces bourbon
In a warmed mug combine water, honey and stir to dissolve the honey. Then add the lemon juice and bourbon and stir. Garnish with a lemon wheel.
