Jam Cake

  • 3 C. flour
  • 1 C. butter
  • 1 C. blackberry preserves
  • 1 C. brown sugar
  • 1 C. white sugar
  • 4 eggs
  • 1 C. black walnuts
  • ½ C. sour cream
  • ¼ C. bourbon
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • ½ tsp. nutmeg
  • ½ tsp. cloves

Cream butter and both sugars in a stand mixer. Add beaten eggs. Sift flour and then add to the mixer. Add spices while mixing. Add baking soda to bourbon and then add to the batter and mix. Add sour cream and preserves and mix. Coat nuts in flour and then stir into the batter. Divide batter between three greased and floured cake pans. Bake at 325 degrees for 40 minutes. When cakes have cooled stack and frost with caramel icing.

Hot Buttered Bourbon

  • 1 tbs. butter
  • 1 tsp. brown sugar + a dash of cinnamon, nutmeg and allspice
  • Dash of vanilla
  • 2 oz. bourbon

Muddle the butter, spices and vanilla into a paste or “batter”. Add bourbon. Top with hot water and stir until everything is well combined.
