In this episode Stacey and Jessica make Benedictine Spread and Cocktail.
- 8 oz. of Cream cheese (softened or whipped)
- 3 Tablespoons of cucumber juice
- 1 Tablespoons onion
- Pinch of Cayenne pepper
- ½ teaspoon Salt
- Drop of green food coloring (optional)
Grate the cucumber into a bowl (seeds and all). Press through a fine mesh sieve with a spatula into a bowl until you have 3 tablespoons of cucumber juice. Repeat the process with the onion or if you prefer to have some texture just finely mince. Add the cucumber, onion juice, cayenne and salt to the cream cheese and mix with a spatula. For a more festive spread add a drop of green food coloring and thoroughly combine. Keep chilled until you’re ready to serve. Serve on thinly sliced, crustless bread as finger sandwiches
Benedictine Bourbon Sour
- 2 oz. Kentucky Bourbon
- 1 oz. Benedictine Liqueur
- ½ oz. Lemon Juice
- ¼ oz. Simple Syrup
Pour all of the ingredients into a cocktail shaker with ice and shake thoroughly. Strain into a rocks glass and garnish with a thinly sliced lemon wheel.
