Cornbread & Bourbon Hot Chocolate

Bourbon Hot Chocolate

  • ¼ cup unsweetened cocoa powder
  • 3 cups whole milk
  • ¾ cup bittersweet chocolate chips
  • 1 to 3 tablespoons sugar
  • Pinch of salt
  • 4 ounces Bourbon
  • Marshmallows
  • Bourbon chocolate sauce

In a saucepan bring ⅓ cup water to a boil. Whisk in cocoa. Reduce heat to medium and whisk in milk. When milk simmers, whisk in the chocolate, sugar, and a pinch of salt, and reduce heat to low. Whisk until chocolate is melted and very smooth. Taste and add more sugar if you like. Turn off the heat and whisk in the Bourbon. Ladle into mugs and top with marshmallows and Bourbon chocolate sauce.

Kentucky Skillet Corn Bread

  • 1 cup ground cornmeal
  • 1 cup buttermilk
  • 1 egg
  • 1/2 teaspoon salt
  • 1 tablespoon bacon grease

In a bowl, mix all ingredients except the bacon grease. Melt bacon grease in a 9" cast iron skillet. Stir grease into mixture, leaving a coating in the skillet. Pour into skillet and set in 500-degree oven for 10 - 15 minutes or until golden brown.
