Bourbon Peach Freezer Jam

  • 4 cups peaches (sliced or diced)
  • 1 ½ cups sugar
  • ½ cup water
  • 3 tablespoons Kentucky Bourbon
  • 1 tablespoons lemon juice
  • 4 tablespoons fruit pectin
Slice enough peaches to get 4 cups. Bring to a boil with sugar, water, bourbon and lemon juice for about 3 to 4 minutes until frothy.
Fill small glass canning jars (4 oz. jars make a nice amount to use once open).
Leave space at the top when filling ( ¼ to ½ inch).
Let cool for at least an hour on countertop without lids. Add lids and rings and set overnight in the fridge.
Can be used now on biscuits or poured over ice cream. Great pairing on a Kentucky charcuterie board with thinly sliced country ham.
Will last a month in fridge after opening. Freeze unopened jars in freezer for one year, let thaw before serving.

Bourbon Peach Smash

  • 1 cup peeled and diced ripe peaches (~2 peaches)
  • 1 ½ ounces freshly squeezed lemon juice
  • 1 ½ tablespoons brown sugar
  • 4 ounces Bourbon
  • 6 ounces ginger beer
  • Fresh basil and peach slice for garnish

Muddle the peaches, lemon juice, and brown sugar. Strain through a fine mesh sieve, then add to a cocktail shaker half-filled with ice, add Bourbon, and shake well. Pour into a tall glass with ice and top off with ginger beer. Garnish with basil and a fresh peach slice and enjoy.
