Benedictine & Smiling Irishman

Benedictine

• 12 ounces cream cheese
• 1 medium cucumber
• 1 tablespoon onion
• Mayonnaise
• Pinch salt
• Few drops Tabasco
• Green food coloring

Peel, seed then grate cucumber. Grate the onion. Mix into the cream cheese with salt, Tabasco, mayonnaise (just enough to make mixture thin enough to stir and combine) and a few drops of green food coloring (to your color preference).

Smiling Irishman

• 1 ounce Bailey’s Irish Cream
• 1.5 ounces Bourbon
• 1.5 ounces Pistachio Liqueur
• 2-3 drops green food coloring

Shake all ingredients in a cocktail shaker with ice. Strain into a martini glass rimmed with green sugar.
