Strawberry Rhubarb Pie & a Strawberry Sour
Strawberry Rhubarb Pie
- 1 ½ cups strawberries (sliced)
- 1 ½ cups rhubarb (sliced)
- ½ cup light brown sugar
- ¼ cup water
- 1 ½ tablespoons corn starch
- Juice of half a lemon
- ½ teaspoons cinnamon
- ¼ teaspoon lemon zest
- 1 unbaked pie crust
Mix all ingredients and cook in a saucepan until thickened – approximately 5 to 10 minutes. Bake in pie crust of your choice at 350 degrees for 30 minutes (or according to your crust instructions) until set.
Strawberry Sour
- 2 ounces Bourbon
- 3/4 ounce lemon juice
- 1/2 ounce strawberry simple syrup
- 1/2 ounce egg white
Add all ingredients to a shaker (without ice) and shake vigorously for about a minute. Add ice and shake some more. Strain into a coupe glass and spritz lemon juice on top. Garnish with a strawberry.
