We have an immediate opening for a Culinary Manager to join our dynamic team! This position reports to the General Manager. Responsibilities as a Supervisor: Actively identify emerging talent with a strong commitment to train and develop their team. Interview, hire, train, recommend performance evaluations, resolve problems, provide open communication, perform annual reviews, and recommend discipline and/or termination when appropriate. Create a culture amongst team members where respect and teamwork promote a cooperative and fair working environment to maximize employee morale, productivity, and efficiency. Demonstrate a commitment to delivering high level internal/external guest service; proven leadership and change leadership skills; ability to build, develop, and motivate teams. Responsibilities & Duties: Ensure food quality, quantity, freshness, and presentation meet Haymarket standards. Monitor and ensure proper temperatures are maintained at all stages during the production of made to order products including sandwiches, soups, salads, smoothies, etc. Maintain high productivity levels and ensure team schedules are kept within budget. Execute food and beverage production according to Haymarket approved recipes. Maintain good vendor relationships, develop new vendor relations, and ensure all paperwork is properly submitted for vendor processing. Document waste and spoilage using appropriate forms; meet all spoilage targets. Collaborate with Commissary culinary team and garden team on seasonal menus and customer requests. Maximize sales potential through effective and proper procedures for prepping, storing, and rotating products. Maintain awareness of customer flow and needs and directs team members as necessary to satisfy and delight customers; respond promptly to customer needs and questions. Perform a variety of administrative tasks for inventory and ordering. Follow and ensure compliance with established procedures, including weights and measures, health and sanitation, and safe work practices. Ensure food production meets and exceeds all state and local food code standards as well as Hazard Analysis Critical Control Points (HACCP) standards. Maintain and ensure maintenance of a clean and sanitary work environment; maintain equipment in accordance with Haymarket cleanliness and safety standards; ensure walk-ins and freezers are clean and organized. Perform opening, mid, and closing duties as assigned; ensure accuracy of product pricing. Immediately report safety hazards and violations. Perform other duties as assigned by Haymarket leadership. Requirements: Strong knowledge of made to order products, rotisserie chicken and smoothie techniques. Analytical ability and proficiency in math; ability to scale recipes, calculate margins, monitor profitability, and manage inventory. Basic computer skills including MS Word and Excel. Strong to excellent communication skills and willingness to work as part of a team. Ability to deliver information in a clear and respectable manner to fellow team members, customers, and vendors. Ability to meet customer service expectations and standards in all interactions with customers, vendors, and team members. Ability to follow directions and procedures, effective time management and organization skills. Passion for health and wellness lifestyle and the mission of Haymarket. Strong work ethic and ability to work in a fast-paced environment with a sense of urgency. Understanding of and compliance with Haymarket quality goals. Must have the flexibility to work weekends and with working hours. Physical Requirements Must be able to lift 50 pounds Standing/walking 6-8 hours. Hand use: single grasping, fine manipulation, pushing and pulling. Work requires the following motions: bending, twisting, squatting, and reaching. Exposure to FDA approved cleaning chemicals. Exposure to temperatures: <32 degrees Fahrenheit (freezers), 32-40 degrees Fahrenheit (refrigerators), >90 degrees Fahrenheit. Ability to work in wet and dry conditions. Ability to work a flexible schedule including nights, weekends, and holidays as needed. Ability to use tools and equipment, including knives, box cutters, electric pallet jacks, and other heavy machinery. Ability to use ladders.
