Succotash
In this episode Stacey and Jessica make Succotash and Fizzy Bourbon Punch
Succotash
- 3 cups cherry tomatoes
- 4 ears of corn
- 2 cups Lima beans
- 1 cup chopped onion
- 1 pound bacon
- 2 T bacon grease
- 2 T butter
- Salt and pepper to taste.
Fry bacon and reserve grease. Met butter and 2 T of bacon grease in cast iron skillet. Add onion and sauté until soft, but not browned. Cut corn kernels from the cob. Add corn and Lima beans. Cook over medium or low heat for about 5 minutes. Try to avoid browning. Add halved tomatoes to pan. Season. Cook 3 more minutes. Place in serving bowl and add crumbled bacon to taste. (Save the rest for sammies!)
Fizzy bourbon punch
- 1 bottle of champagne
- 12 ounces of pomegranate soda
- 1 cup of Bourbon
- 1/4 cup ginger liquer
- Like wedges for garnish
Combine all of the ingredients in a punch bowl and stir. Use a ice ring to keep cool or pour over ice in punch glasses. Garnish glasses with a lime wheel.
