Blue Monday

Blue Mondays

  • 3 c. sugar
  • 1 c. water
  • 1 c. heavy cream
  • 1 pinch salt
  • ¼ tsp. baking soda
  • ¼ c. butter
  • 10 oz. melting chocolate

In a heavy saucepan add sugar and boiling water. Bring to soft ball stage (250 degrees). Add baking soda and salt to cream. Pour mixture, 1 tablespoon at a time, into the boiling sugar and water, so as not to disrupt the boil. Add butter and bring to hard ball stage (260 degrees). Keep stirring to makes sure not to scorch the bottom.

Prepare a marble slab – coat in butter and chill. Pour the candy onto the slab. Once it is cool enough to handle and starts setting up, use your hands (butter hands to keep from sticking) to being to pull the candy until it is set up enough to form it into twisted ropes. Cut the twisted ropes into about 2 inch sections or desired length for candy. Allow to harden and cool completely. Dip the candies in the melted chocolate and let cool.

Black Silk Manhattan

  • 1 oz. Averna
  • 2 oz. bourbon
  • 2 dashes chocolate bitters
  • 2 dashes orange bitters
  • Cherry

Stir all ingredients together in a cocktail stirring glass with ice. Strain into a coupe glass and garnish with a cherry.
